Hello! Through this blog, connecting with people, and learning to love my new cookbooks (The Pioneer Woman Cooks, One Pot Meals, Family Suppers and Meals-on-the-Go), I've made family suppers go from one night a week to 5-6 times a week.
I've become more confident in making a meal that my family enjoys and looks forward to as they help set up and clean up with me. My son Jacob told me last week how much he enjoys coming home to a hot dinner as soon as he walks in the door from his high school soccer practice (BIG smile on my face with that comment). My college student, Corey, arrived home for spring break and I can't wait to make family dinners this week that include him. I'm putting more meals in the freezer and learning all the things I can do with frozen hamburger! We add salads and applesauce to every meal and we have a fruit bowl on the table with apples and bananas.
Thank you, Guideposts friends, for reading and commenting for two months as this busy mom has made strides in keeping her resolution and putting smiles on her husband's and four teenagers' faces. Yesterday, I made homemade chicken noodle soup and it became so thick, that my dinner went from being a soup to a casserole. Everyone loved it at youth group. I brought home enough for my husband and the last helping went to Jacob as his "2nd supper." He's 6'2 and eats a "2nd supper" very often.
That's all for now. With sincere appreciation...
