Russian Tea Cakes

These cookies are widely associated with Christmas, though their connection to Russia is questionable. How they came by their name is lost to time.

Russian Tea Cakes

Recipes similar to this one are found in cultures all over the world.

Ingredients

1 c. soft butter 2 ½ cup flour
½ c. confectioner’s sugar, plus 1 c. for rolling cookies in ¼ tsp. salt
1 tsp. vanilla ¾ c. chopped walnuts

Preparation

1. Beat butter and vanilla until smooth. Combine dry ingredients, stir into butter mixture just until blended.

2. Mix in walnuts. Chill batter about half an hour.

3. Preheat oven to 400ËšF. Roll batter into 1-inch balls and place on ungreased baking sheet. Bake 10-11 minutes.

4. While still hot, roll in confectioners’ sugar. Cool. Just before serving, roll cakes in sugar again.

Makes 4 dozen.
