Best Ever Banana Muffins

These muffins are, in the words of Marilyn Bush, "healthy, delicious and downright good for you!"

Ingredients

2 c. ripe bananas, mashed1 tsp baking soda
1 c. sugar3 Tbs buttermilk
2 eggs½ tsp vanilla
1 c. melted butter½ c. chopped pecans or walnuts
2 c. plus 1 Tbs flour 

Preparation

1. In a large mixing bowl, stir bananas, sugar and eggs until creamy and well-mixed.

2. Add flour, soda and butter; stir well.

3. Add buttermilk, then vanilla, then nuts, stirring well after each.

4. Pour into 12-cup muffin pan. Bake in 350° oven for 20 to 30 minutes or until toothpick inserted into center of muffin comes out clean.

Makes 12 muffins.

I am startled to see a muffin recipe with 450 calories per muffin! As soon as I read 1 cup of butter for 2 cups of flour,I immediately glanced at the Nutrition facts -- This is definitely a very unhealthy food choice! Marilyn

I am not a true baker. My question is should I use all-purpose or self rising flour for the muffins.

Hi Elsa. If our recipes don't specify a type of flour, you can assume it's all-purpose.
