Black Forest Cheesecake Parfaits

This delicious holiday dessert is easy to prepare and is sure to be a hit with family, friends and guests who may stop by.

Ingredients

4    c. frozen unsweetened cherries 6 oz. ⅓-less-fat cream cheese
½   c. black cherry preserves ¾   c. chocolate wafer crumbs (about 15 cookies)
½   c. sugar Grated lemon rind (optional)
2    T. fresh lemon juice  

Preparation

1. Combine cherries and preserves in a medium saucepan; bring to a boil. Reduce heat to medium-low, and simmer 5 minutes. Remove from heat, and cool completely.

2. Combine sugar, juice, and cream cheese in a large bowl, and beat with a mixer at medium speed until smooth (about 2 minutes). Cover and chill.

3. Spoon 2 teaspoons crumbs into each of 8 (8-ounce) glasses; top each with 11/2 tablespoons cream cheese mixture and 3 tablespoons cherry mixture. Repeat layers once, ending with cherry mixture. Garnish with rind, if desired.

YIELD: 8 servings (serving size: 1 parfait).
