Memaw's Sweet Taters

A dessert-y Thanksgiving side. Just dump everything together and stick 'em in the oven!

Ingredients

2 large (29-ounce) cans sweet potatoes

1 8-ounce can crushed pineapple (undrained)

2 cups light brown sugar

1 10-ounce bag miniature marshmallows

Ingredients

1. Preheat oven to 350°F. Lightly spray a 9-by-1 1-inch glass baking dish with non-stick cooking spray.

2. Drain the sweet potatoes and place in a large bowl. Use a mixer to beat the potatoes until they’re smooth. Add pineapple and brown sugar; beat well.

3. Pour into dish, spreading potatoes evenly. Bake for 20 minutes.

4. Remove from the oven and cover potatoes with marsh­mallows. Return to oven and bake till marshmallows are golden brown, about 10 minutes.
