Low-Fat Lentil Soup

Ingredients
1 pound dried lentils
1 tablespoon olive oil
1 cup onion, chopped
2 cloves garlic, minced
2 cups carrots, sliced
1 cup celery, sliced
1 8-ounce can tomato sauce

6 cups water
1 14-ounce can vegetable broth
2 bay leaves
1 pound sliced chicken sausage (or ½ cup leftover shredded chicken)
Black pepper, to taste
1 teaspoon sea salt
Lemon slices, for garnish
Red wine vinegar
Preparation
1. Rinse and pick over lentils for stones. In a Dutch oven, heat oil till hot. Toss in onion, garlic, carrots and celery. Sauté for 10 minutes or till onion is translucent and vegetables are tender crisp.
2. Add tomato sauce, water, vegetable broth, bay leaves and lentils. Bring mixture to a boil. Cover; reduce heat and let simmer for about 25 minutes or till vegetables are slightly soft.
3. Add chicken sausage and pepper. Cover and let cook for another 10 minutes or till sausage is heated through. Add salt.
4. Ladle soup into bowls. Top with lemon slices and a dash of red wine vinegar.
Serves 8 to 10

I made the Lentil Soup yesterday----from the recipe in September 2010 Guideposts, which has the amount of water listed incorrectly!! Very quickly realized it needed much more than the `1 cup' water called for, so checked the online version (calls for 6 cups water).
It took much longer than the cooking time listed in the recipe for the lentils to cook. Not a problem since I had started in the afternoon.
Regarding the sodium comment by pawsforaffection, I noted that as well; so just didn't add the teaspoon of salt. Also, you can find tomato sauce w/o salt, and vegetable broth w/reduced sodium.
The soup was very good. My husband and I both enjoyed it, and I have plenty to freeze for later!

The Lentil Soup by Carolyn Meagher sounds very good. I was concerned that the focus was entirely on fat content and no mention of the sodium content which absolutely must be addressed with heart problems. We all know that there is entirely too much sodium in prepared products such as the canned tomato sauce, canned vegetable broth and the chicken sausage that are used in this recipe. There were no nutritional totals included with this recipe. I must be aware of this information. Thank you. Linda
