Taste the muffin that people from all over drive to Canyon Lake, Texas, to try.

These muffins are, in the words of Marilyn Bush, "healthy, delicious and downright good for you!"
|2 c. ripe bananas, mashed||1 tsp baking soda|
|1 c. sugar||3 Tbs buttermilk|
|2 eggs||½ tsp vanilla|
|1 c. melted butter||½ c. chopped pecans or walnuts|
|2 c. plus 1 Tbs flour|
1. In a large mixing bowl, stir bananas, sugar and eggs until creamy and well-mixed.
2. Add flour, soda and butter; stir well.
3. Add buttermilk, then vanilla, then nuts, stirring well after each.
4. Pour into 12-cup muffin pan. Bake in 350° oven for 20 to 30 minutes or until toothpick inserted into center of muffin comes out clean.
Makes 12 muffins.
